Organic Sugar

SOWING

Before planting, our certified organic sugarcane crop, the first and one of the largest in Colombia, is subjected to a 3-year transition process, in which all synthetic chemical products previously used for fertilization and weed control are eliminated. We apply our certified organic compost, improving the physical, chemical, and biological properties of the soil for planting seeds from organic lots. The sugarcane varieties planted are not genetically modified.

IRRIGATION

At Providencia we care for and protect the most important and vulnerable natural resource in the world, water. That is why for the second step of production of our organic sugar, we extract water from wells and irrigate with efficient application systems such as gate and pivot irrigation, reducing its consumption by up to 48%.

FERTILIZATION

One of the most important steps in the production of Providencia Organic Sugar is the fertilization of the field. For this purpose, we apply vinasse and organic compost, which are very important for the nutrition and productive growth of the sugar cane, as well as for the improvement of the chemical, physical, and biological characteristics of the soil. In addition, we plant green fertilizers, which are plants that fix nitrogen from the atmosphere, so that it is then incorporated into the soil and is available for organic sugarcane cultivation.

HARVEST

Before cutting the organic cane, we take a 24-hour break in the milling process. During this time, the cane yards are cleaned and the equipment involved in its production is thoroughly washed.

We cut the cane green to reduce the content of foreign matter as much as possible and in this way, we deliver clean cane of the highest quality to the factory.

Once deposited on the tables, the organic cane is dry cleaned to remove as many leaves and foreign material as possible. No bactericide is applied in the mill; the cane is washed with hot water, steam and a natural organic flocculant to lighten the cane juice.

PRODUCTION AND PACKAGING

Our sugar is produced in compliance with food safety principles. The last step, and no less important, is packaging, which we do in multiple presentations for the industry and the final consumer in national and international markets.

DISTILLERY AREA

Organic honeys that are not used in the crystallization of organic sugar are considered by-products and are used in the distillery as raw material for the production of organic extra neutral alcohol and carbon dioxide gas, through fermentation, distillation, and dehydration processes.

PREPARATION

Fermentation is carried out through a continuous process in four fermenters that guarantee a fermentation time of 24 hours, obtaining as a product a mixture of organic compounds called wine, with a concentration of 10.2% (v/v).

LABORATORY

The wine is taken to the distillation area where the ethanol concentration is carried out; the first stage is the stripper column, where the wine enters to obtain alcohol at 45% (v/v), which is then taken to the rectifying column where organic rectified alcohol is obtained at a concentration of 95 (v/v).

ISOTANKS

This organic rectified alcohol has a high content of impurities, for which it enters in a purification plant consisting of 3 additional distillation columns to obtain the organic extra neutral alcohol, with a maximum impurity content of 19 ppm and an alcoholic strength of at least 96%v/v..
